I eat broccoli at least once a week. They are so easy to cook and can be really tasty too.
With this recipe I pair the broccoli with some chicken breast that I cook with chilli and fresh basil.
For the broccoli, chop 2 garlic cloves and add to a deep non-stick frying pan.
Fry the garlic for a couple of minutes, then add the chopped broccoli, salt and pepper to taste and drizzle over some olive oil. You can also decide to chop in a few mushrooms and one small courgette.
Stir well to make sure that the garlic flavour penetrates into the broccoli. Cook for a couple of minutes, then poor a small cup of water and cover with the lid.
Cook for approximately 10-12 minutes. I personally like the broccoli a bit crunchy but not too hard or too mushy either!
For the chicken, chop an organic chicken breast into cubes, then cover with fresh chopped basil, dry red chilli flakes, salt and pepper.
Cook the chicken with some good quality butter in a non-stick flying pan.
Half way through the cooking, squeeze in half a lemon. Once cooked, serve the chicken with the sautéed broccoli.
