Summer time for me means outdoor cooking and dining.
If you are lucky enough to have access to a barbecue, and are a follower of my blog 😉, sticking to the Paleo diet and feeling healthier is rather easy.
For the salad, take some crunchy mixed salad, add a handful of chopped tomatoes, half a dozen of radishes and a few black olives. Drizzle some olive oil (not too much because the mackerel is an oily fish), then add salt and pepper to taste and mix well.
Cook the mackerel fillets on a hot barbecue. Turn them a couple of times until they are nicely cooked.
Move the mackerel fillets onto a chopping board and slice them in strips.
Serve the mackerel on top of the salad, add a good squeeze of fresh lemon and enjoy!
