Minimalist eggs and salmon Paleo brunch

This is another super quick Paleo breakfast / lunch. It takes no time to cook and it will leave you satisfied. It will give you energy and will fill you up and get you going for a while.

On a bed of peppery rocket salad place 2 slices of good quality smoked salmon.


Fry 2 organic eggs and place them on top of the salmon. I personally like to keep the yolk a bit runny – it works very well with this dish too.

Add salt and pepper to taste and enjoy.


PS: I do not dress the salad simply because it balances out perfectly the saltiness of the smoked salmon and it gets the wetness from the runny yolk. Yummy!
