This is another super quick breakfast/lunch Paleo dish protein rich. I really like bresaola because it is very lean meat (although not strictly Paleo…😒)
- Mixed green salad
- 40gr of bresaola, thinly sliced
- 1 ripe avocado
- 2 eggs
- Half lemon
- Extra Virgin Olive oil
Place the washed salad on a plate and cover with the bresaola slices.
Cut the avocado in half and scoop out the flesh and distribute it evenly on the plate.
Poach 2 eggs and add them to the dish. Add a squeeze of lemon, a dash of Extra Virgin Olive Oil, salt and pepper and enjoy!
